The Secret Life of Ketchup! Sun. May 3rd (Daytime)

Held at the Horton Market Kitchen, 10 Manitoba St., St. Thomas

In this immersive food-and-history 6-Course experience, we trace the remarkable evolution of ketchup—from ancient fermented sauces like garum, to mushroom “catchop” in early British cookbooks, and finally to the rise of industrial bottling with Heinz.

Through storytelling and carefully curated tastings, you’ll explore how flavour, trade, migration, preservation techniques, and industrialization shaped one of the world’s most enduring condiments.

You'll begin this unique experience with a prepared of Nuoc Cham Pearls on a Rice Cracker, a bright bite inspired by ancient fermented sauces of Rome and Southeast Asia.

You’ll then move into a hands-on warm appetizer, preparing Mushroom Toast with Ketjap Manis—cremini mushrooms sautéed with garlic, butter, white wine, and Worcestershire sauce, served on toasted brioche with a light sweet soy glaze, microgreens, and shaved red onion, bridging British mushroom ketchups with Southeast Asian influences.

Next, you'll create a hands-on cold appetizer features a Tomato & Mozzarella Salad with heirloom tomatoes, buffalo mozzarella, fresh basil, parmesan crisp, and balsamic glaze, celebrating the rise of tomato ketchup in the 19th century.

For the main course, you’ll take part in assembling a Mini Chicken Slider with elegant Potato Pavé featuring early-style tomato ketchup, bringing the evolution of American ketchup traditions to the plate.

The journey continues around the glove with an International Ketchup Flight, featuring banana ketchup from the Philippines, curry ketchup from Germany, pumpkin ketchup from Jamaica, and hot & sweet ketchup from India, served with thin chips or crackers to explore global adaptation.

The experience concludes with a playful reinterpretation of ketchup in a sweet form -  Vanilla Ice Cream with Caramelized Apple Ketchup.
