Join Chef Chris for a warm, aromatic journey through the bold, sun-drenched flavours of Morocco. Crisp Moroccan-style maakouda (savoury potato fritters) are prepared live and paired with a harissa-spiced aioli, highlighting texture, seasoning, and the balance of heat and creaminess in North African cooking.

The experience continues with grilled lamb kebabs finished with vibrant chermoula and apricot couscous, where Chef Chris demonstrates the art of building fresh herb sauces and layering sweet and savoury flavours for depth and complexity. The evening concludes with spiced almond and honey phyllo parcels — crisp, golden, and delicately sweet — showcasing simple pastry techniques and elegant finishing.
