Frittata is basically a crustless quiche , which is a great gluten free option while packing lots of  flavorful protein into this main course dish

Makes 12 individual  Frittata

Ingredients

12 slices black forest style ham

Cut into small strips

2 bunches green onions chopped

¼ lb butter

2 tbsp chopped curly parsley

12  whole eggs plus

12 egg whites from the hollandaise

(Or 18 whole eggs)

1 lb grated gruyere cheese or Emmental style cheese of your choice

Salt & Pepper to taste

Method of preparation- In a large bowl, place all your eggs, salt & pepper, mix well. Separately in a large pan, melt the butter on medium heat, add in the ham and the green onions, cook briefly, remove from heat, add in the parsley. Evenly distribute the ham mixture into individual well greased oven proof dishes (ramekins or similar), top up with the egg mixture and cover with gruyere cheese. Bake in a 350*F oven covered for about 10 minutes, then uncover and cook for another 10-12 minutes, serve immediately from the oven with some fresh fruit and honey, yogurt- or whatever you like!
