The timeless comfort of a classic apple pie—Warm, cinnamon-spiced apples wrapped in a golden, flaky crust.

Ingredients: 

For the crust

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt (we used Fine Himalayan Salt)
  • 1 tbsp vanilla sugar (to add gentle Vanilla aroma)
  • 1 cup cold unsalted butter, cubed
  • 6–8 tbsp ice water

For the filling

  • 6–8 apples, peeled, cored, and sliced
  • 3/4 cup sugar
  • 2 tbsp brown sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • 1 tbsp butter
  • 1 ½ tsp Pepper Tree Apple Pie Spice

For finishing

  • 1 egg + 1 tbsp water, beaten
  • 1 tbsp coarse sugar, optional

Method of preparation:

1. Make the dough: Mix flour, Himalayan salt, and vanilla sugar. Cut in cold butter until crumbly. Add ice water a little at a time until dough comes together. Divide into 2 discs, wrap, and chill 30 minutes.

2. Make the filling: Toss sliced apples with sugar, brown sugar, flour, apple pie spice, and lemon juice.

3. Assemble: Roll out one dough disc and fit into a 9-inch pie dish. Add apple filling and dot with butter. Roll out second disc and place on top. Seal and crimp edges. Cut small slits in top.

4. Finish: Brush with egg wash and sprinkle with coarse sugar if using.

5. Bake: Bake at 425°F (220°C) for 20 minutes, then reduce to 375°F (190°C) and bake another 35–45 minutes until golden and bubbling.

6. Cool: Let cool at least 2 hours before slicing.

For best flavor, use a mix of tart and sweet apples like Granny Smith and Honeycrisp.
