A Fresh Spring Affair! Tues. May 14th

Tuesday, May 14th. 6:00 pm - 8:30 p.m. Demonstration

Chef Chris Podgornik will be showcasing some of the best local early spring ingredients starting with a discussion of  in season vs out of season, how asparagus is graded and how to properly clean and prepare local Asparagus. Chef will pair fresh Asparagus with Organic Greens Salad accompanied by an aged balsamic vinaigrette and toasted pine nuts.

Chef will prepare a Chilled Strawberry Bisque with fresh local strawberries, yogurt, and honey topped with toasted almonds. This warm weather chilled soup will be prepared with enhanced presentation and Chef will discuss how to create creme fraiche at home.

The final dish is Pan seared Lake Erie Yellow Perch with capers and lemon butter served with Grilled Johnny Cakes, and Baby Bok Choy.  Chef will discuss differences in quality between yellow and white perch, how to present & cook the fish properly and how to elevate your presentation for home or guests.
