Join Chef Olivia in this vibrant mouth watering class that captures the fresh, sun-drenched flavours of an Italian summer table. You'll begin with a vibrant heirloom tomato and stone fruit salad, paired with creamy burrata, basil oil, and a touch of chili crunch. Next, learn to pan-sear delicate local pickerel to golden perfection, served with a silky corn velouté and smoky charred scallions for a dish that’s both refined and deeply comforting.

For your final course, Chef Olivia will instruct you on the techniques for a luxurious roasted peach panna cotta, finished with a delicate thyme honey drizzle—a soft, herbaceous finale that feels like summer on a spoon.
