Celebrate apple season with Chef Julie in this class designed to engage and inspire celebrating one of our favourite local farms featuring apples sourced from nearby Great Lakes Farm! You’ll learn to work with apples across three distinct techniques—from fresh and crisp to caramelized and golden.

You'll start with an vibrant apple-kissed coleslaw, sharpen your knife skills while learning to balance acidity, crunch, and flavour, served in Boston lettuce cups for a fresh, elegant start. Next, Chef will share key skills as together you prepare pork tenderloin, paired with a warm maple apple and shallot compote and smooth mashed celeriac—a fall-forward twist on a classic pairing. Finally, Chef Julie will teach you how to master the fundamentals of tarte Tatin, a French caramelized apple tart finished with house-made crème Chantilly.
