Thank you to everyone that attended our 2024 annual VIP night! Here are the recipes that were highlighted that night. 

 

Mincemeat Twists:

  • 2 x Rolled Shortcrust Pastry Sheets
  • A jar mincemeat
  • zest of 1 large orange
  • 25g sugar
  • 1 tsp ground cinnamon
  • A little icing sugar, to finish

Description:

  1. Preheat the oven to 375F.
  2. Carefully roll out the pastry. add parchment paper to line two large baking trays.
  3. Spread one pastry sheet with the mincemeat evenly to the edges.
  4. Grate over a generous amount of orange zest and place the remaining pastry sheet on top.
  5. Mix together the sugar and cinnamon and sprinkle over the pastry evenly. Use your hands to press the sugar mixture into the pastry.
  6. Cut into 16 equal-sized strips and twist each strip holding both ends and place on the prepared baking sheets.
  7. Bake for approximately 15 minutes until golden. Allow to cool, sieve over the icing sugar before serving.

 

Icebox Cookies:

  • 1 cup soft butter
  • 3/4 cup brown sugar
  • 1/2 tsp vanilla or almond extract
  • 1/8 tsp salt
  • 2 1/2 cup flour
  • 1 cup of cherries OR 1 cup of citrus peel (or if you want both do 1/2 cup cherries and 1/2 cup citrus peel)

Description: 

  1. Cream butter and sugar together until light and fluffy, add vanilla, salt, and flour.
  2. add cherries/citrus peel and mix until all combined. Form dough into rolls and saran wrap. Cool overnight. 
  3. Sliced onto greased sheet and bake @ 375F for 10-14 minutes.

 

Holiday Sangria (makes pitcher)

  • 1 bottle of white wine
  • 1/2 bottle Split Tree Cranberry Ginger Cordial
  • 1L Cranberry Ginger ale
  • Fresh oranges and cranberries (garnish)

Description:

  1. Mix all ingredients into pitcher.
  2. Serve in wine glass over ice, garnish with oranges and cranberries
